End of Summer Sweets

Here are some sweet end-of-summer treats to enjoy with family and friends.

 

Lemonade Bar

Treat your guests to a fun way to enjoy a summertime favorite – – Lemonade!  Start with a good lemonade (such as Simply Lemonade) and then let your guests customize their drink with other mix-ins.  Be sure to have plenty of ice on hand to make it extra cool and refreshing!

No-Bake Pineapple Upside Down Cake

Here’s a great, fast, and easy way to enjoy an all-time favorite without heating up the kitchen!

1 Store-bought golden loaf cake (such as Sara Lee)

2 Cups Diced Pineapple* (fresh or canned)

1 Stick Butter

1 Cup Brown Sugar

Maraschino Cherries (optional)

Whipped Topping (optional)

Slice the loaf cake into the desired number of slices you want to serve (average loaf cake should offer at least 6 good-sized slices).  Don’t make the slices too thin or the cake will fall apart.  Lightly coat a skillet with butter or butter spray and place on the stove at medium heat.  Do not let the pan get too hot or smoky.  When the pan has come up to heat, place 2-3 slices of cake in the pan and let it brown as if you were making a grilled cheese sandwich. Turn the cake over and brown the other side.  The cake should be golden brown and a little crunchy on the edges.  Remove the cake from the pan and set aside.  Repeat if you are serving more slices.

In the same pan, over medium heat, add the stick of butter and allow it to melt.  To the melted butter add the brown sugar and mix thoroughly.  The butter/brown sugar mix will become hot and bubbly.  Once it reaches that stage, add the diced pineapple.  Mix the pineapple well in the butter/brown sugar and reduce the heat to low.  Let the mixture cook for another 2-3 minutes over low heat.  Place a slice of the grilled loaf cake on a dessert plate or in a shallow bowl and spoon desired amount of pineapple mixture over the top.  Add a dollop of whipped topping and a cherry if desired.

*You can substitute peaches, nectarines, or bananas if you’re not a pineapple fan.
